Dilly Beans for Canning

Serves: 4 pints
- 2 pounds long green beans
- 1 tsp cayenne pepper
- 4 cloves garlic
- 4 heads dill
- 2½ cups water
- 2½ cups white vinegar
- ¼ cup salt
- Snip tops of beans and then wash them.
- Pack beans, lengthwise, into hot Ball jars, leaving ½" - 1" head space.
- To each pint, add ¼ tsp cayenne pepper, 1 clove of garlic and 1 head of dill.
- Combine the remaining ingredients and bring to a boil.
- Pour boiling hot over beans, leaving ½" - 1" head space.
- Wipe rims clean.
- Adjust caps.
- Process pints and quarts for 10 minutes in a boiling-water bath
