Baked Oatmeal-001

Today, I decided to attempt to make something different for breakfast. I don’t remember when, but a little while ago on one of the blogs that I follow, someone posted about making baked oatmeal.  I had never heard of it before and it sounded good. Considering that some of my family members don’t enjoy oatmeal, this sounded like this may be more appetizing than traditional oatmeal.

I went to All Recipes and searched for baked oatmeal and choose the most popular and highest rated recipe. After browsing the reviews on the recipes I ended up adjusting the recipe to how we enjoy it.

Baked Oatmeal

Breakfast Baked Oatmeal Bars(Can Be Made The Night Before)

This comes together quickly and is delicious. You can also assemble this the night before and refrigerate it until morning.

Ingredients
  • 3 cups rolled oats
  • ¼ cup brown sugar
  • ¼ cup molasses
  • 2 tsp ground cinnamon
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 2 eggs
  • ½ cup applesauce
  • 2 tsp vanilla extract
  • ¾ cup dried fruit ie. dried cranberries, frozen blueberries, raisins
Instructions
  1. Preheat oven to 350F.
  2. In large bowl, mix everything together except the fruit until well blended.
  3. Stir in fruit gently.
  4. Spread into a greased 9x13 inch baking dish.
  5. Bake in preheated oven for 40 minutes.
  6. Serve warm
  7. Optional: Spread peanut butter on bars and allow to "melt in"
  8. Enjoy!
