One of my favorite foods that I grew up on was roast beef in the crock pot.  It is a super fast dinner and you always had leftovers. However, after two or three days of plain roast beef, it gets a little old.  So my mom would get creative and would make Beef Stroganoff. You can make this in a half hour flat. Here is her recipe.

Fast and Easy Beef Stroganoff
1+ lbs leftover roast beef with gravy
Pasta for 8 servings
1 cup sour cream
salt and pepper

Cook pasta according to the directions and drain.

Take left over beef and cut up into bite-size pieces. Put into a large microwave safe dish. Add gravy and slowly warm up until hot. Add sour cream and mix well.  Mix pasta with beef and gravy.  Add salt and pepper to taste. Serve immediately.
