This bread comes together very quickly and is ready in less than 1 hour
Ingredients
4 to 4½ cups flour
1 Tbsp sugar
1 teaspoon salt
1 teaspoon baking soda
4 Tbsp butter
1 cup raisins (or currants)
1 large egg, lightly beaten
1¾ cups buttermilk
Instructions
Preheat oven to 425 degrees
Mix together dry ingredients
Cut in butter with dry ingredients until mixture looks like coarse crumbs
Add raisins and mix to coat
And buttermilk and beaten egg
Mix only until incorporated. DON'T OVER MIX!
If dough seems too wet, add a little flour to your counter and put dough on top of it. Gently mix in extra flour only until dough is able to hold it's shape.
Shape until a round ball
Place on greased baking sheet (or greased cast iron skillet)
Slice an X in the top of the bread, using a sharp knife.
Bake for 35-45 minutes or until golden brown
