Banana Oatmeal Breakfast Cookies

This cookies are great for traveling and freeze well. My kids love the because they have a few chocolate chips to make them cookie like.

Ingredients

  • 3 large very ripe bananas
  • 4 cups rolled/old fashion oats
  • 2/3 cup unsweetened applesauce
  • 2 eggs
  • 1/2 cup milk
  • 1/2 Cup raisins
  • 1/2-1 cup coarsely chopped walnuts
  • 1 tsp vanilla
  • 1.5 tsp cinnamon
  • 1/2-1 cup chocolate chips

Instructions

  1. Preheat oven to 350F

  2. In a large bowl, add the peeled bananas and mash them.

  3. In a blender or mini chopper, add two cups of oats and chop until a fine powder.

  4. Add grounded oats plus the additional 2 cups of oats two the bananas.

  5. Add all of the other ingredients to the bowl and mix well.

  6. With an ice cream scoop, place mixture in a greased cookie sheet. With a fork, gently flatten the mixture to make them more cookie shaped and so they bake evenly.

  7. Bake for 15-20 minutes until cooked through.

  8. Serve warm or freeze for an easy breakfast.
