Turn your excess zucchini into a yummy mock apple cinnamon quick bread
Combine all filling ingredients in a medium size sauce pan. Cook for 15-20 minutes or until zucchini is tender and most of the sauce has thickened
Mix butter, sugar, eggs and vanilla until light and fluffy.
Add the rest of the ingredients and mix only until combined. Do not over mix!
In a lightly greased 9x5" loaf pan, put 2/3 of bread mixture. Add a layer of zucchini filling on top of the mixture and spread. Use approximately 1-1 1/2cups of the filling. Top with remaining bread mixture and spread evenly.
In a small bowl, mix 1 Tbsp of sugar and 1 tsp cinnamon together. Sprinkle sugar/cinnamon mixture over the top of the loaf pan.
Bake at 350°F for 40 minutes or until internal temperature is 190°.
