This fast and easy quiche is a snap to throw together and can be made the night before to make breakfast easy.
Rinse and cut broccoli into small, bite size pieces. Place in a microwave safe bowl and cover. Microwave on high for 3 minutes and let it SIT and STEAM covered while you make the rest of the dish.
In a bowl, mix together the eggs, salt, pepper and half & half. Set aside.
In a greased, glass 9x13 baking pan, layer the steamed broccoli, onion, ham and cheese evenly throughout the pan.
Pour the egg mixture on top of the other ingredients. No need to mix.
If you are making this the night before, just cover with plastic wrap and refrigerate.
Bake in 350°F for 45-50 minutes until set and golden brown.
Serve hot or cold. Lasts several days in the refrigerator!
