I went out to the garden this morning and what did I find? Huge zucchini and yellow squash.  I had checked the garden on Saturday and there was nothing ready to get picked, but just like that, the squash and zucchini grew and now they are on the large side.  So far, we are keeping up with all of the produce. Today, I decided that I would like to try some cooked zucchini on my sandwich. I am so pleased with how it turned out that I thought I would share the recipe with you.

Easy Marinated Zucchini Slices
1 large zucchini or two smaller ones
Italian salad dressing

Cut off both ends of the zucchini and then in half. Take one half and stand it upright on a cutting board.  Using a sharp knife, very carefully slice 1/2 inch slices down the entire length of zucchini. Repeat this until you have sliced the entire zucchini half, about 4-5 slices.  Place slices in a shallow dish and add Italian salad dressing, turning zucchini to evenly coat it.  Cover and refrigerate for at least 30 minutes.  Preheat skillet until hot and the pan sizzles when you add a drop of water. Carefully place slices of zucchini in hot pad. Cook for two minutes of each side. Slices will be crisp, tender. Each side should sear nicely and give it a wonderful flavor. Remove from pan and add to your favorite sandwich.
