At the local Price Choppers, everyday the meat workers go through the meat case and mark down any packages of meat that need to be sold quickly.  Usually if you do your shopping around 9:30am to 10am, you can just catch the workers putting on the mark down stickers. 

A few months ago, I found some packages of Perdue ground chicken burgers marked down for under $1.00 a pound. Stacking that with a Perdue coupon, the cost for the chicken was very inexpensive. My problem was that I don’t like plain chicken burgers and didn’t have any recipes for ground chicken.

I still purchased the chicken and threw it into my freezer figuring that I would eventually find a recipe to use it in.  Well, the last couple of weeks, I have been on a mission to clean out my chest freezer and get it ready for the upcoming holidays.  And would you guess what I found in the bottom of the freezer?  One package of ground chicken. I decided it was time to use it up, so I searched for a ground chicken recipe and found one for the crock pot.  I made it this afternoon for lunch and really enjoyed it. It was very easy to make and was ready in only a few short hours.

Cheesy Jalapeno Chicken Loaf
2 lbs ground chicken
1/2 cup fresh bread crumbs
2 onions, finely chopped
2 cloves garlic, minced
2 jalapeno peppers, finely chopped
1 tsp ground cumin
2 tsp dried oregano leaves
1 tsp salt
1/4 tsp black pepper
2 tbsp Worcestershire sauce
2 eggs, beaten
1 cup shredded Monterey Jack cheese
4 oz cream cheese, optional

Line your slow cooker with foil. In large bowl, combine all of the ingredients including the cream cheese until well blended. Place in crock pot and cook on low for 8-10 hours or high for 4-5 hours, or until juices run clear or meat thermometer reads 170 degrees.

Note: You may substitute ground turkey for the ground chicken.
