No-Bake Strawberry Cream Cheese Tart

This simple, no-bake strawberry tart is sure to please all those cheesecake lovers! Bursting with strawberry flavor, it's a wonderful summer dessert that captures the flavors of the season.

Ingredients

  • 1 pint strawberries hulled and divided, plus more for topping
  • 2/3 cup sugar plus 2 Tbsp sugar, divided
  • 2 cups graham cracker crumbs finely crushed
  • 1/2 cup butter melted
  • 2 pkgs cream cheese softened
  • 2 tsp vanilla extract
  • 1 cup heavy whipping cream
  • powdered sugar optional

Instructions

  1. Hull strawberries. Place in a blender or food processor with 2 Tbsp sugar and puree. Place mixture in a saucepan and bring to a boil. Cook until reduced by half and cool completely.

  2. Break up your graham crackers and grind them in a food processor until fine crumbs.

  3. In a bowl, combine graham cracker crumbs and melted butter and press mixture evenly into the bottom and halfway up the sides of a 9-inch springform pan. Place in the freezer.

  4. Using a stand mixer, or a large bowl and a hand mixer, beat softened cream cheese until smooth. Add cooled strawberry mixture, 2⁄3 cup sugar and vanilla. Mix until smooth, add heavy cream and mix until soft, fluffy peaks form.

  5. Remove crust from freezer and pour in the filling, smoothing out the top. Cover with plastic wrap and chill in refrigerator 4 to 5 hours, or until filling is set. Unclip and remove the sides of the springform pan.

  6. Halve or chop remaining strawberries and arrange on top of tart. Dust with powdered sugar, if desired.
