Life is busy around the Christmas season and trying to find time to cook for a family can be quite a challenge.  The crock-pot is certainly a very useful tool in helping us feed our family well. I recently discovered a very easy way to cook chicken that can be used so many different ways.  You can not ruin this recipe!





Oh, So Easy! Crock-Pot Chicken
1 whole chicken (whatever size will fit in your crock-pot)
Salt and Pepper and Thyme


Remove the giblets from the chicken and rinse the chicken with cool water.  Place chicken inside greased crock-pot and season the top of the chicken with a generous amount of salt and pepper.  Add a pinch of Thyme to the top of the chicken.  Cook on high for 4 hours or low 6-7 hours.  


At this point, the chicken is completely ready to eat. However, I usually let it cool and then remove all of the meat from the bones.  I then have all this meat ready for casseroles, chicken soup, ground chicken sandwiches or chicken salad.  There is so much you can use this for! You can also add onions and celery to the cavity of the chicken before you put it the crock-pot for a more flavorful broth.
