My Great Aunt has always made this baked macaroni and cheese recipe. The only difference is that it has been adapted for the microwave so it’s easier for her to cook. I hope you enjoy this as much as we do!
Old-Fashion Baked Macaroni & Cheese
1 cup dry macaroni
2 cups milk
3 Tbsp flour
1/4 tsp ground mustard
10 oz extra sharp cheddar cheese
1 tube of Ritz crackers (approx 30 crackers)

Cook macaroni in boiling water until tender and drain.  While macaroni is cooking, put milk, flour and mustard in microwave safe dish and whisk together until blended.  Cut up cheese until small chucks and add to flour mixture. Microwave for 5 minutes, stopping halfway to stir.  Cheese sauce is done when all of the cheese has melted.  Add drained macaroni to cheese mixture and salt and pepper to taste.  Pour into oven proof casserole dish. Top with crushed Ritz crackers. Bake at 350F for 15 minutes. Turn off oven and leave macaroni and cheese in oven for another 15 minutes. Serve immediately.
Note: If this sits for to long, the macaroni will absorb the cheese mixture. This is a great make ahead dish. Just place in the refrigerator prior to baking. When ready to bake, pour over a small amount of milk to keep it from drying out. Baking times will be longer since it will be cold from the refrigerator.
