As part of my freezer clean-out challenge, I made my version of beef stew with some stew beef that I found in my freezer. My family loves this hearty dish served with hot cornbread or a thick slice of rustic bread with butter.  Serve this with a green salad and you will have a complete meal.


Healthy and Savory Beef Stew

Ingredients
  • 1.5lbs stew beef, cut into cubes
  • 1 large onion
  • 2 Tbsp minced garlic
  • oil
  • 3 cups carrots, cut into chunks
  • 2 cups celery, cut into large pieces
  • 5 cups potatoes, cut into chunks
  • 1 large (28oz) can of tomatoes (died, stewed, or whole)
  • water
  • 3-5 cubes beef bullion
  • salt/pepper
  • 1 tsp parsley
  • 1 tsp basil
  • ½ tsp oregano
  • ½-1 tsp seasoned salt
Instructions
  1. Place a few tablespoons of oil inside of a heavy bottom stock pot. Heat oil until hot. Add beef to hot oil, season generously with salt and pepper. Add onion and stir to coat everything with oil. Leave beef and onion in pan without stirring for approximately 5 minutes. You want the beef to get nice and brown.
  2. After 5 minutes, stir the beef and then every minute or two, stir the beef so it evenly browns.
  3. After the beef is brown, add tomatoes, water, carrots, celery, potatoes and all of the seasonings.
  4. Allow it to simmer on low for several hours or on medium heat for approximately one hour. Adjust salt and pepper to taste. The beef should start to fall apart when the stew is done.
