Healthy Breakfast Granola Cereal

A staple in our home, we serve this 1-2x a week for breakfast along with any type of fruit, dried or fresh.

Ingredients

  • 8 cups old-fashion oats
  • 2 cup desiccated coconut (unsweetened)
  • 1/4 cup ground cinnamon
  • 1/4 cup sesame seeds
  • 1/4 cup flax seeds whole or ground (your preference)
  • 2 Tbsp vanilla extract
  • 2/3 cup oil
  • 1 cup raw honey

Instructions

  1. Add oats, coconut, cinnamon and seeds in to a large bowl.

  2. In a sauce pan, add oil, vanilla and honey. Cook over medium-low heat until almost a boil, stirring frequently.

  3. Add liquid ingredients to dry ingredients and toss to evenly coat.

  4. Spread on un-greased LARGE baking sheet in a 250°F oven. Bake for 1 to 1.5 hours, stirring every 15 minutes until the granola is dry and golden. (Note: when you remove it from the oven, it will crisp up more as it cools)

  5. When cool, store in covered container with raisins mixed in. Serve with milk or on top of yogurt with fresh fruit. Enjoy!
