Ingredients

  • 2 cups water
  • 2.25 tsp active dry yeast
  • 1/4 cup sugar
  • 1 Tbsp salt
  • 5.75-6 cups all-purpose flour
  • 1 small egg
  • 1 Tbsp water

Water Bath Ingredients

  • 2 quarts water
  • 1 Tbsp sugar
  • 1 Tbsp baking soda

Instructions

  1. Place all of the ingredients in a stand mixer EXCEPT the egg and 1Tbsp water.

  2. With the dough hook attachment, turn on knead setting and set the timer for 10 minutes.

  3. Dough will be stiff and not sticky. Once the 10 minutes is up, stop the mixer and place the dough in a bowl and cover with a kitchen towel.

  4. Let rise for 1 hour OR until doubled.

  5. Once doubled, remove dough from bowl onto LIGHTLY floured countertop. Divide dough into 12-16 equal pieces

  6. Roll each piece into a 10" rope and connect ends to form a circle. Roll connected dough ends against the counter to form a round bagel.

  7. Place on greased cookie sheet to rest while shaping the rest of the bagels.

  8. In a large skillet, add water, sugar and baking soda and bring up to a simmer.

  9. Turn heat down and begin adding the bagels into the water, approx 4-5 at a time.

  10. After 30 seconds, turn the bagel over in the water and cook the 2nd side for another 30 seconds.

  11. Remove from water and place back on greased baking sheet.

  12. Add water to egg and beat until well mixed. Carefully brush the egg wash on just the tops of the bagels. Add toppings if desired.

  13. Bake in a preheated 425°F oven for 20 minutes or until deeply golden brown.
