Happy Monday everyone!

It’s been two weeks of meal planning and things did not turn out how I had planned. Some friends surprised us with a dinner and then the rest of the week was off since Art was working on his Snail’s Pace Challenge and trying to get another kitchen cabinet built before February 20th. My planned recipes came from the recipe book All Recipes Cookbook. I love this cookbook for its whole foods approach and just delicious recipes!

For those of you who are new here, I have never, ever, ever attempted to meal plan.  It seemed like a daunting task and one that I didn’t want to dedicate the time to. However, as my family has grown, meals become more and more difficulty to just throw together. I felt like I needed to try some intentional planning for our dinners.

 


Monday: Spicy Garlic-Lime Chicken

Tuesday: (Planned) Pulled pork, potato salad
(Actual) Stuffed Shells, cucumber and tomato salad with garlic bread

Wednesday: Leftovers

Thursday: (Planned) Scallop Potatoes with ham, lettuce salad
(Actual) Chicken alfredo
