Years ago, I wrote this recipe down on a scrap piece of paper, but I never made it.  I stumbled across the recipe recently when I was organizing my recipes and was pleasantly surprised at how simple and delicious this chicken and rice dish is.  I was expecting bland and flavorless, but this is anything but that! I hope you enjoy it! This is one of those recipes that will be sure to stay in my recipe repertoire for fast and easy! Enjoy! -Janelle

One-Pan Oven Baked Chicken and Rice

The dish is any but flavorless. Simple to prepare and it keeps the mess to a minimum.

Ingredients
  • 4 large chicken breasts
  • ⅔ cup Italian salad dressing
  • 1⅓ cup uncooked white rice
  • 1 lb frozen peas
  • ½ cup French Fried onions
  • 3½ cups chicken broth (I used Watkins)
  • 1 tsp dry Italian seasoning
Instructions
  1. Place chicken in a greased, 9x13" dish.
  2. Pour salad dressing oven chicken
  3. Bake uncovered at 400º for 20 minutes
  4. Remove chicken from oven and place rice, peas and onions under the chicken (mix together and place chicken back on top of the rice/peas)
  5. Mix chicken broth and Italian seasoning together and pour over chicken.
  6. Baked uncovered for 30-40 minutes or until the rice is cooked.
  7. Let stand for 5 minutes before serving.
