Janelle’s Favorite Budget Friendly Italian Meatball Mix

Ingredients

  • 1 pound 80/20 or leaner ground beef
  • 1 pound ground turkey
  • 1/2 cup dried lentils cooked in water, then drained
  • 1 egg
  • 1/2 cup Italian style bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup finely chopped onion
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 cloves garlic, minced
  • 1 Tbsp fresh parsley chopped
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil

Ingredients needed for serving approximately 50

  • 10 pounds 80/20 or leaner ground beef
  • 3 pounds ground turkey
  • 3 cups dried lentils cooked in water, then drained
  • 10 eggs
  • 3 cups grated Parmesan cheese
  • 5 finely chopped onions
  • 2 Tbsp salt
  • 2 Tbsp black pepper
  • 5 Tbsp minced garlic
  • 1/4 cup fresh parsley chopped
  • 2 Tbsp dried oregano
  • 1.5 Tbsp dried basil

Instructions

  1. Place all of the ingredients into a large bowl and mix well until combined. 

  2. Using an ice cream scoop for equal meatball sizes, shape until rounded balls and place  on greased baking sheets. 

  3. Bake in preheated 425° for 20-25 minutes or until golden brown and has an internal temperature of 165°.
