Lazy Layered Enchiladas

Ingredients

  • 1 pound ground turkey
  • 1-2 tbsp olive oil
  • 1/2 cup onion finely chopped
  • 4 cups enchilada sauce canned or homemade
  • 1 pkg flour tortillas
  • 1/2 pound Mexican shredded cheese
  • 2-3 cups black beans cooked
  • 1 can black olives sliced

Instructions

  1. Chop onion and add to skillet with oil. Add ground turkey and cook everything until turkey is no longer pink and the onions are tender. Add cooked beans and olives and a few small scoops of enchilada sauce to the mixture and mix.

  2. Lightly grease a 9×13″ or 10×15″ glass baking dish. Add just enough enchilada sauce to cover the bottom of the dish.

  3. Begin layering the tortillas, followed by 1/2 of the beef and bean mixture. Add another layer of tortillas and the rest of the beef and bean mixture. Top with one final layer of tortillas and cover with the enchilada sauce. You will probably have some extra enchilada sauce for serving. Top with cheese.

  4. Bake at 375°F for 30 minutes or until bubbly and the cheese is melted.  Allow to rest for 10 minutes before cutting for easier serving.

  5. Serve with a fresh tossed salad
