I originally posted this recipe last summer but completely forgot about it until yesterday, when I was chatting with my neighbor and she mentioned that I could make this recipe for dinner.  Needing something fast and cool, I thought I would make this again. Wow! It was a hit with everybody and I loved how fast it went together.  Here is the recipe below.  You can view my original post here.

Because of time and what I had available to me, I ended up using Rozoni Quick Cook pasta which cooked in 3-minutes.  Also because of the time of year, I didn’t have any fresh tomatoes so I ended up using some canned quartered tomatoes that I had canned last summer.  I drained the juice and save it for another use and then just chopped up the tomatoes.  They weren’t firm like fresh tomatoes, but I liked them just as well. BLT Pasta Salad

1/2 cup Miracle Whip (I just used Hellman’s Mayo)
3 tablespoons ketchup
2 tablespoons lemon juice
1 teaspoon sugar
3 cups cooked elbow macaroni (or any other shape you might have in the cupboard)
1/2 cup chopped seeded tomato
2 tablespoons chopped green onions
3 cups shredded lettuce
6 bacon strips, cooked and crumbled

In a large bowl, combine the first four ingredients. Add the macaroni, tomatoes and onions; toss to coat. Cover and refrigerate. Just before serving, add lettuce and bacon; toss to coat.
